Update TrenchBroom (#1361)

### Description of Changes

- Fix typo in name (Trech -> Trench)
- Add extra evidence (AI policy in CONTRIBUTING.md + an actual LLM commit)
- Add NextBroom as an alternative (TrenchBroom fork with anti-AI policy)
